Approachable Session Pale Ale

IPAs are all the rage, and with good reason, but now and then we crave something highly drinkable that still has lots of hop character. The trick here is careful control of late hop additions and dry-hop charges. Pilsner malt sweetness provides critical balance to the tropical and citrus fruit aromas and mildly bitter grapefruit flavor. It also stands in counterpoint to the high attenuation, to yield a pleasant grainy mouthfeel and snappy, crisp finish. Pairing tips: Bitterness emphasizes salty, meaty flavors, and gives initial sharpness to spicy heat, but then softens it in the finish.
