Look for citrusy aromas with hints of fig or date, and a vague floral spiciness such as basil or coriander. As it ages, it will take on a top note of pear and become very crisp.

Storage and Serving Tips:

  • Store upright
  • May be cellared for a year or more at cellar temperature (50 – 60 F)
  • Will clarify if stored 3 or more months at 38 F or less
  • Serve very cold in a Belgian tulip glass, then allow to warm somewhat to release its full flavor profile
